The vines that produce this cuvée have fossil oysters as pebbles of "Ostrea Crassissima": this fossilized oyster is very large, characteristic of the Miocene (3 to 25 million years).

 

His current descendants live in the warm African seas.

Grape varieties: Roussanne, Grenache Blanc, Marsanne, Viognier


Soil: Clay and limestone, dating from the Miocene and Villafranchian


Yield: 30 hl / ha


Alcoholic strength: 13.8% vol.


Aging: Fermentation in new barrels of Roussanne, Grenache and Viognier, then aging in barrels: for Grenache and Roussanne, Viognier.

 

The barrels are assembled in January in steel vats and prepared for bottling.
